METHOD:

1. Put the tiger nuts in water, cover with a cloth and leave at room temperature for 24-48 hours until it has softened then drain.

2. Soak the dates in water to soften.

3. Add the soaked tiger nuts, soaked dates, coconut and water to a blender (you can blend in portions of your blender isn’t big enough).

4. Blend on high speed till it’s creamy.

5. Strain the milk through a sieve or muslin cloth, squeeze as much liquid as you can from the pulp.

6. Add the cinnamon or any spice of your choice and blend again.

7. Sieve one last time.

8. It’s best enjoyed chilled.
                   

Note:

The drink should always be chilled to avoid the taste changing.

* Can be taken with or without ice cubes 
* The rest should be stored in an airtight jar and stored in the refrigerator
                                   

BLENDING WITH OTHER INGREDIENTS:


* Cut the bases and tops of the celery stalk bunch
* Wash and clean the celery with other ingredients you want to add
* First blend the celery with very little water till it’s a smooth purée 
* Then sieve out the juice from it
* Then blend the rest of the ingredients and add to it
* Stir it together 
* But ensure that the celery is more than the rest of the other ingredients like the cucumber, apple, ginger, etc.
* Serve it fresh

Ingredients:

* 1/2 cup condensed milk 
* 1 teaspoon granulated sugar 
* 2 1/2 cups of coconut flakes 
* 1/2 cup of almond or cashew nuts.    

NOTE: 

Always use fine desiccated coconut, so it’s easy for you to roll into balls. 

If the mixture is too sticky and you are not able to roll the balls, then add more desiccated coconut.

METHOD:

* Get a bowl and combine the condensed milk, 1 cup of the coconut flakes, and powdered sugar mix and blend them together ( feel free to add nuts here)
* Place the mixture in a refrigerator and chill for 1-2 hours 
* Once it’s cold, take a spoonful of the mixture and roll it into balls 
* Roll each in the remaining coconut flakes 
* Store in the fridge till you are ready to eat 
* Very simple 

Now that we know its amazing benefits, let’s see a recipe that is very popular in Southern Nigeria, it’s called Edikang ikong soup. The Efik (Cross River and Akwa Ibom) people regard this dish as a very important dish and it has spread to other states too because of how rich and highly nutritious it is.


VEGETABLE SOUP RECIPE (EDIKANG KONG SOUP):
VEGETABLE SOUP RECIPE (EDIKANG KONG SOUP):


Ingredients:

1) 1 kg of fluted pumpkin
2) 200 g water leaves or lamb lettuce
3) Assorted meat, Shaki, cow skin (Kanda), and snail
4) Stockfish
5) Smoked fish
6) 250 ml palm oil
7) Periwinkles (optional)
8) 3 tablespoons of ground crayfish
9) 4 seasoning cubes
10) 1 medium size onion
11) 4 scotch bonnet pepper
12) Salt


PREPARATION:
Wash and cut the vegetables into very thin slices and keep aside.

*wash and cut the assorted meat into bite-able sizes, wash the stockfish, smoked fish, snails, kanda, and periwinkles, and set aside.

*place the assorted meat, stockfish, kanda in a clean pot, add the onions, 2 seasoning cubes, salt, pepper, and cook till it’s tender. Make sure you add very little water, make sure the water in the meat stock is very little.

*When the meat is done, add the dried fish, periwinkles, and steamed snails (if you are using them). Then add crayfish, pepper if it’s not enough, and palm oil, allow to cook for 10 minutes.

*now add the water-leaf or lamb lettuce and allow to cook for 5 minutes.

Now add the fluted vegetables, stir, allow to simmer for 3 minutes on low heat and your soup is ready.

Can be eaten with any swallow and even white rice.

They are high in antioxidants, which help destroy the free radicals and prevent them from attacking the body and skin.

Some animal studies found that it may improve heart function and reduce the risk of heart disease.

Studies show if you want to keep your sugar in check, then it should be an addition to your diet, as the fiber it contains lowers blood sugar by slowing the rate of digestion and absorption of sugar in the body.

Their high content in fiber and low calorie helps makes weight loss effective.

They are rich in many nutrients and contain a good dose of vitamins, minerals, and a little amount of niacin, magnesium, and copper.


They can be baked, roasted in the oven, steamed, grilled, broiled, barbecued or fried, they easily soak up flavor and have a rich meaty texture.

So there are many ways to use aubergines, but let’s try two simple recipes.

First recipe:
Ingredients include:

• Rice 150 g
• 1/2 onion bulb(sliced)
• 1 Aubergine chopped into bite-sized pieces
• Vegetable oil 1 tbsp
• Golden caster sugar 2 tbsp
• Red wine vinegar 2 tbsp
• Soy sauce 2 tbsp
• Cornflour 2 tbsp
• Green beans 100 g halved
• Red chili 1 shredded

Preparation


STEP 1:
Cook the rice properly. Take a wide shallow pan with a lid, put some vegetable oil, then add the onions and aubergines to fry, until golden and softened, stirring every few minutes.

STEP 2:
Mix the sugar and vinegar in a small bowl. Add the soy sauce and stir until the sugar dissolves. Add the cornflour and stir until it dissolves.

STEP 3:
Add the bean and red chilled to the pan and cook for 4 minutes with the lid on. Add the sweet and sour mix, stir and continue cooking for a further 2 minutes with the lid on. Serve with the rice.

Second recipe:
Ingredients include:

• 4 Aubergines
• 3 tomato fruits
• 1 medium-sized onion
• 1/4 cup of palm oil
• Habanero pepper
• Smoked mackerel or boiled (if that’s what is available)
• Seasoning and salt to taste
• 1 small handful of clove basil or scent leaf


Preparation


STEP 1: 
First, make a puree with the aubergines. Cut into small pieces, put in a blender, pour in the amount of water to help the blades of the blender move, then blend till it’s smooth.
Slice the onion, dice the tomatoes, chop the basil, flake and debone the fish and blend the pepper.

STEP 2:
Pour the puree into a clean pot and cook till all the water dries up. Set it aside.

STEP 3: Pour the palm oil into a clean dry pot and heat it up, don’t bleach, just hot enough for the onion to sizzle, then add the sliced onions and pepper, leave till the aroma is released, then add the tomatoes, stir and cook over medium heat for 20 minutes, then add the aubergines and cook on lower medium heat for 5 minutes

STEP 4: Add the seasoning, salt, and mackerel. Stir and leave to simmer. After 3 minutes add the basil leaf, stir and keep for 10 seconds and it’s ready.
It can be eaten with boiled yam, boiled or fried plantain, or with rice.

  • 2 tbsp honey
  • 1 tbsp of freshly grated ginger
  • 2 tbsp of milk
  • 1/2 cup of ice

Preparation:


• Combine the banana, yoghurt, ice, honey, ginger, and milk, then blend till it’s smooth

Note: 

You can use sugar instead of honey.
